we are looking for somewhere to go for a few weeks from early Jan. We never lie on beaches and are happiest when the "road is less travelled" and definitely out of season. Can you say more about what we could expect from the azores at this time of year. We are vegetarians. (Don't eat fish) Would we find it difficult to find somewhere to eat?

You certainly would not go to the beach there in January as this is the rainier time of year. The weather should be fine for exploring all that the island has to offer. And you will not find many other tourists there at this time of year.
There are a couple of vegetarian restaurants in the Azores. Your best option is to go to Sao Miguel Azores as that is the most populated island.
Further, I would recommend staying somewhere like this accommodation in Azores. Having a kitchen in your accommodation would be a big advantage for you. The grocery stores have good selection.
